Truly Yummy Potato Salad with Peas

I have a number of go to potato salad recipes but my Truly Yummy Potato Salad with Peas is one of my favourites especially when served alongside my Truly Yummy Slow Roast Lamb or even my Truly Yummy Feta Lamb Burgers. It’s the perfect addition to a summer barbecue feast.
This version is fresh, light and full of flavour. The vibrant mix of potatoes and peas gives it a summery lift, while the minty and zesty lemon dressing, made with soya cream and mayonnaise keeps it lighter and completely dairy free. Naturally gluten free and easy to make, it’s a crowd-pleasing dish the whole family will love.

Truly Yummy Potato Salad with Peas
Equipment
- 1 large saucepan
- 1 salad bowl
Ingredients
Salad ingredients
- 1 kilogram baby new potatoes cut in half
- 2 cups frozen peas
Dressing ingredients
- ⅓ cup mayonnaise recommend Stokes Real Mayonnaise
- ⅓ cup soya cream recommend Alpro Single Soya
- 30 grams fresh mint, finely chopped
- 1 bunch spring onions, finely sliced both the white and the green parts
- 1 lemon, zested
- 1 tsp honey
- salt and pepper
Instructions
- Add the potatoes to saucepan and cover with water. Bring to the boil then simmer until cooked all the way through.

- Drain and leave to cool either to one side or for speed in the fridge.
- Similarly cook the peas either in a pan of water on the hob or in a bowl covered with a little water in the microwave. Again drain and leave to cool either to one side or for speed in the fridge.

- Whilst the potatoes and peas are cooling, prepare the dressing by combining the dressing ingredients, mayonnaise, soya cream, honey, lemon zest, spring onion and mint leaves in a bowl ensuring the honey is thoroughly mixed.

- Add the cooled potatoes and peas to the salad bowl, pour over the zesty dressing and then gently toss to coat everything evenly.

- Season with a little salt and pepper to taste.
