Truly Yummy Chicken Rogan Josh

Looking for a gluten free and dairy free curry, look no further. This truly yummy chicken Rogan Josh is a game changer for homemade curries. I recently discovered that Pataks curry pastes in jars are not only gluten free but also dairy free. There is a lot of choice but I tend to use the Rogan Josh, Korma and Tikka Masala pastes.
These pastes save time and money while still delivering that authentic, restaurant quality taste. Plus there’s no need to buy a long list of spices.
In this recipe, I skip the instructions on the jar and use my own fresh ingredients for maximum flavour. I typically use chicken, but you can easily swap it for other meats or add a vegetable or two creating a vegetarian option.
This is great served with my Truly Yummy Turmeric Rice if you fancy some extra flavour and a pappadum or two. Again, I highly recommend the Pataks papadums as they are both gluten free and dairy free either the ready made ones or the ones you can cook at home in the microwave.
The Pataks products can be found in the usual aisle of the supermarkets. Be sure to buy the paste as the ready made sauces in the jars do contain milk.

Truly Yummy Chicken Rogan Josh
Equipment
- 1 cast iron round or oval casserole pan with lid
Ingredients
- 2 tbsp extra virgin olive oil recommend Belazu Early Harvest extra virgin olive oil
- 1 white onion, thinly sliced into half moons
- 4 chicken breasts, diced into chunks
- 2 large vine tomatoes, quartered
- 1/2 jar Rogan Josh Paste recommend Pataks Rogan Josh paste
- 1 tin chopped tomatoes recommend Mutti chopped tomatoes
Instructions
- Heat the oven to 150℃
- Heat the oil in the pan, add and fry the onion until soft and translucent.

- Add the chicken and cook until it's just cooked through.

- Stir in the paste and allow to cook for a minute ensuring everything is evenly coated.

- Add the tin of chopped tomatoes and fresh quartered tomatoes and stir.

- Bring to the boil, then pop the lid on and place in the oven. Slow cook for an hour. This will allow the flavours to deepen, the chicken breast to soften and more importantly the sauce to thicken.
- Serve with a rice of your choice and a handful of pappadums.
