A teaspoon or two can transform steamed broccoli into something special and turn simple cabbage into a side dish worthy of a restaurant. It’s incredibly versatile. I also like to drizzle it over salads, plain chicken breast or boost the flavour of oven-roasted white fish.

Store it in a jar in the fridge for up to a week. You’ll find the flavours will mellow and continue to develop. Just remember to bring it up to room temperature and give it a good stir before serving.

I was inspired to make this dressing after seeing a segment on a morning show. They didn’t share the recipe, only the ingredients and they called it a “sexy dressing.” Try it and you’ll see exactly why!

Truly Yummy Lemon & Caper Dressing

Gluten free and dairy free lemon & caper dressing. Recommended ingredients Belazu Crete Gold Extra Virgin Olive Oil, Aspall Raw Organic Apple Cyder Vinegar, lemon, garlic, capers in wine vinegar, chilli flakes, fresh flat leaf parsley, ground pepper.

Equipment

  • 1 food processor

Ingredients
  

  • 6 tbsp extra virgin olive oil recommend Belazu Crete Gold Extra Virgin Olive Oil
  • 1 lemon, juiced
  • 1 cup fresh flat leaf parsley
  • 2 tbsp capers recommend in wine vinegar rather than brine
  • 1 clove of garlic, crushed
  • 1 tbsp apple cider vinegar recommend Aspall Raw Organic Apple Cyder Vinegar
  • ¼ tsp chilli flakes

Instructions
 

  • Simply place all the ingredients in the food processor and blitz until the parsley and capers are well chopped and everything has blended together.
  • Season with a little pepper only and pour into a jar.

Notes

I like to keep some capers chunky, so I blend 1 tablespoon in the food processor, then finely chop the remaining tablespoon and stir it in at the end.
