Truly Yummy Pickled Red Onions

I originally discovered this recipe while searching for the perfect side to accompany pulled pork. My truly yummy pickled red onions are so tasty, crunchy and delicious they can be added to just about anything. My husband especially loves them in his lunchtime sandwiches. They’re also a perfect match for burritos, tacos, Poke bowls, stews, salads, and grazing boards.

With a simple list of fresh gluten free and dairy free ingredients, they take just minutes to prepare. The longer the onions soak in the recipe juices, the more vibrant their jewel-like fluorescent pink hue becomes, intensifying their flavour beautifully.

For the best flavour, ideally prepare them at least a day before you want to use them. They keep perfectly in the fridge for weeks.

They are so yummy, I’d recommend making extra to give as gifts. Simply present them in Kilner jars for a thoughtful homemade treat!

Gluten free and dairy free pickled red onion recipe. Recommended ingredients Belazu Chardonnay white wine vinegar, red onion, orange, lime, dried oregano, salt

Equipment

  • 1 Storage jar – I like to use a kilner round clip top jar
  • 1 Mandoline – ideally use a mandoline to ensure the onions are evenly sliced

Ingredients
  

  • 2 large red onions
  • ½ cup freshly squeezed orange juice 2- 3 large oranges
  • ¼ cup freshly squeezed lime juice 4 limes
  • ¼ cup white wine vinegar Belazu Chardonnay white wine vinegar
  • ¼ tsp salt
  • 1 tsp dried oregano

Instructions
 

  • Thinly slice the red onions either by hand or using a mandoline for evenly thickness.

  • Place the onions into the jar and add the remaining ingredients. Pop a lid on and give the jar a good shake to ensure the mixture of juices and vinegar coat the onion slices.
    If making a larger batch, I'd suggest mixing everything in a bowl and decanting the onions into jars ensuring the remaining juice mixture is evenly shared amongst the jars.

  • Set to one side for a couple of hours until neon pink. Store in the fridge.

Notes

There are plenty of white wine vinegars available, but the higher the quality, the richer and more enhanced the flavour of the onions.
