Gluten free and dairy free pickled red onion recipe. Recommended ingredients Belazu Chardonnay white wine vinegar, red onion, orange, lime, dried oregano, salt
1 Storage jar - I like to use a kilner round clip top jar
1 Mandoline - ideally use a mandoline to ensure the onions are evenly sliced
Ingredients
2largered onions
½cupfreshly squeezed orange juice2- 3 large oranges
¼cupfreshly squeezed lime juice4 limes
¼cupwhite wine vinegarBelazu Chardonnay white wine vinegar
¼tspsalt
1tspdried oregano
Instructions
Thinly slice the red onions either by hand or using a mandoline for evenly thickness.
Place the onions into the jar and add the remaining ingredients. Pop a lid on and give the jar a good shake to ensure the mixture of juices and vinegar coat the onion slices.If making a larger batch, I'd suggest mixing everything in a bowl and decanting the onions into jars ensuring the remaining juice mixture is evenly shared amongst the jars.
Set to one side for a couple of hours until neon pink. Store in the fridge.
Notes
There are plenty of white wine vinegars available, but the higher the quality, the richer and more enhanced the flavour of the onions.
