Truly Yummy Sausage & Butternut Squash Traybake

Take your sausages to the next level with my Truly Yummy sausage and butternut squash traybake. A gluten free and dairy free dish that’s packed with flavour and so easy to make.
I first discovered a version of this recipe on BBC Good Food while searching for a way to switch things up from the usual sausage and mash. After a few tweaks, adjusting the quantities and choosing the right sausages, I’ve made it truly yummy. Although it’s made with sausages, the spicy glaze also works beautifully with chicken breasts, pork steaks or even vegetarian sausages.
I use pork sausages made by my local butcher, simply seasoned and yummy on their own. But this flavourful glaze takes them to another level. I like to ensure all sides of the sausages are brown, and find cooking them slightly longer in the oven, improves their texture too.
Serve this sausage and butternut squash traybake with green vegetables like broccoli stems and peas. If you’d like a carb on the side, new potatoes are a perfect match.
Just be sure to choose gluten free and dairy free sausages. Many supermarket own brands, such as Sainsbury’s Taste the Difference, and those with a high meat content tend to be gluten free. The plainer the sausage, the better so the flavours don’t clash with the glaze. I’d also recommend finding a good local butcher and asking them to accommodate your dietary needs.

Truly Yummy Sausage & Butternut Squash Traybake
Equipment
- 1 large mixing bowl
- 1 rectangular roasting tin
Ingredients
Glaze
- 2 tbsp extra virgin olive oil recommend Belazu Early Harvest extra virgin olive oil
- 1 tsp fennel seeds
- 1 tsp ground cumin
- 1 tsp sweet smoked paprika recommend La Chinata smoked paprika powder
- 1 tbsp honey
- 1 tbsp rose harissa recommend Belazu Rose Harissa
- 1 tbsp tomato purée recommend Mutti concentrated tomato paste
Traybake
- 8 pork sausages
- 3-4 red onions, peeled and quartered
- ½ butternut squash, peeled and cut into 2cm slices
Instructions
- Heat the oven to 200℃.
- Combine all the glaze ingredients in the mixing bowl.
- Tip the sausages, red onion and butternut squash into the mixing bowl and using a spoon gently mix to ensure everything is evenly coated in the glaze.

- Place everything into a roasting tin and put it in the oven. Check every 15 minutes, turning the sausages to brown them evenly. If needed, cook a little longer for a richer color.
