Truly Yummy Chorizo & Avocado Pasta
Gluten free and dairy free chorizo & avocado pasta. Recommended ingredients chorizo cooking sausages, cherry tomatoes, avocado and gluten free pasta.

- 190 g Chorizo cooking sausages, sliced in ½ cm thick slices
- 250 g Cherry tomatoes, cut in half
- 2 Avocados, diced into 1-2 cm cubes
- 500 g Gluten free pasta recommend fusilli or penne
Heat the shallow pan on the hob while brining a pan of water to boil for the pasta.
Add the chorizo slices to the shallow pan and fry over a medium-high heat until they release their spicy oil and begin to crisp around the edges.
Once the chorizo is cooked add the cherry tomatoes, stir, cover and cook on a low heat.
Whilst the cherry tomatoes are softening in the chorizo oil, creating a spicy tomato sauce, cook the pasta.
When the pasta is cooked, drain and add to the sauce.
Turn off the heat and toss the pasta into the sauce. Then gently stir through the avocado cubes so that everything is coated in the spicy tomato sauce.
Serve on it owns or with a sprinkling of vegan cheese or ewes milk pecorino if tolerated.
Always check the ingredients of your chorizo, as some varieties contain milk. Most supermarket cooking chorizo is dairy free, but it's always worth checking the label. Better still, if you have a good local butcher, ask them to make some for you.
If you prefer a saucier pasta dish, simply increase the quantities of the ingredients to suit your taste. Extra tomatoes will create more sauce, while additional avocado and chorizo will make the dish even more generous and flavourful.
