Truly Yummy Feta Lamb Burgers

- 500 g mince lamb ideally from your local butcher
- 30 g fresh mint, finely chopped
- ½ block feta, cut into 1cm cubes recommend Odysea 100% sheep's milk feta
In a large bowl, mix all the ingredients together gently by hand, adding a generous grind of black pepper. No need for extra salt as there is plenty in the feta cubes.
Divide the mixture into four or eight balls and shape by hand into burgers. If there is a lot feta cubes on the edge of the burgers, move the cubes to the centre so the feta is evenly dispersed. Lightly dampen your hands before shaping as it stops the mixture from sticking.
Chill in the fridge for at least 30 minutes or until you're ready to cook.
Cook on a bbq, under the grill, in a griddle pan or in the oven until brown on both sides and cooked all the way through.
The above quantities will make four large burgers or eight smaller burgers.
For a gluten free and dairy free burger I recommend replacing the ewe's milk feta for Violife Greek White.
