Instructions
Preheat the oven to 200℃ fan or gas mark 6.
In a small bowl combine and whisk together the olive oil, crushed garlic, lemon juice, dried oregano and salt to make a dressing.
Cut the potatoes in half, then slice each half into three. Toss the wedges in the lemon garlicky dressing.
Spread out the potato wedges in a single layer on the baking tray.
Place the tray in the oven and roast, turning the potatoes every 15–20 minutes to ensure they brown evenly and turn crisp.
Notes
To avoid the wedges for sticking to the tray I usually line the tray with baking parchment.
