Truly Yummy Stuffed Sweet Potato
Gluten free and dairy free stuffed sweet potato. Recommended ingredients Old El Paso spice mix, Belazu Early Harvest extra virgin olive oil, sweet potato, turkey mince, black beans, Truly Yummy tomato salsa, Truly Yummy Guacamole.

- 4 sweet potatoes
- 1 tbsp olive oil recommend Belazu Early Harvest extra virgin olive oil
- 500 grams turkey mince
- 1 tin black beans, drained and rinsed
- 1 packet spice mix recommend Old El Paso spice mixes for tacos and fajitas
Cook the sweet potatoes either in the microwave or oven at 200℃. Depending on the size they should only take 5-10 minutes in the microwave or ½ hour in the oven.
Whilst the sweet potatoes are cooking, heat the oil and fry the mince until cooked.
Add the black beans and spice mix to the mince and combine so everything is coated.
Pour in 150ml of water, give everything a stir and cook on a low light until the sauce has thickened.
Once the sweet potatoes are cooked, plate up by opening a sweet potato, add your mince filling and top off with Truly Yummy Guacamole and Truly Yummy Salsa.
