Truly Yummy Tomato Salsa
Gluten free and dairy free salsa. Recommended ingredients cherry tomatoes, garlic, red onion, green chilli, lime juice, sugar, frozen chopped coriander.

- 350 grams cherry tomatoes, cut into quarters
- 1 clove of garlic, crushed
- 1 small red onion, finely diced
- ½ green chilli, deseeded and finely chopped
- ½ lime juiced
- 1 tsp sugar
- 1-2 tbsp frozen coriander or freshly chopped coriander
Place all the ingredients into a serving bowl and mix together with a grind or two of salt and pepper.
Leave to stand for at least half an hour to allow the flavours to deepen.
Before serving give everything a stir.
If you prefer your salsa without tomato seeds, feel free to deseed them before adding to the bowl. I’ve tried it both ways, but with cherry tomatoes, the seeds are so small they’re barely noticeable plus, skipping that step saves time on prep.
Feel free to add more fresh chilli for a little more spice. If you don't have a green chilli to hand, a red chilli works easy well.
Any remaining salsa can be kept in the fridge for up to 2-3 days to enjoy as a snack with some corn tortilla chips.
