Truly Yummy Zesty Slaw
Gluten free and dairy free zesty slaw. Recommended ingredients white cabbage, red cabbage, spring onions, lime, fresh or frozen coriander, mayonnaise, ground cumin, Alpro Single Soya, salt & pepper.

Slaw vegetables
- ½ small white cabbage
- ½ small red cabbage
- 1 bunch spring onions
Zesty dressing
- 1 lime, juice only
- 1 tsp ground cumin
- 2 tbsp coriander - fresh or frozen, chopped recommend using frozen as it is cheaper and already chopped.
- 4 tbsp mayonnaise
- 4 tbsp plant-based cream recommend Alpro Single Soya
- Salt & Pepper
Zesty dressing
In a small bowl add the dressing ingredients - cumin, coriander, plant-based cream, mayonnaise and lime juice.
Give everything a good mix and stir in the chopped spring onions.
Assembly
Place the sliced cabbage in the large serving bowl.
Pour over the zesty dressing with a good grind of salt and pepper then give everything a good mix so the cabbage is coated in the zesty dressing.
Either serve immediately or cover and store in the fridge for a couple of hours.
Great slaw for making ahead as the flavours will develop.
For an even zestier slaw, finely grate the lime zest and add it to the dressing before juicing the lime.
