Truly Yummy Stuffed Sweet Potato

This recipe came to life during an indoor cycling session. My trainer was discussing healthy, satisfying meals, and inspiration struck. That’s how my Truly Yummy Stuffed Sweet Potato was born!
Packed with lean turkey mince and black beans for a boost of protein, and balanced with naturally sweet, nutrient rich sweet potatoes, this dish is both wholesome and filling. Topped with my Truly Yummy Tomato Salsa and Truly Yummy Guacamole, it becomes a vibrant, cost-effective meal the whole family will love.
To add a little heat, I mix in a simple spice blend. For those in the family who can tolerate dairy, I serve it with a dollop of sour cream and a sprinkle of grated cheddar.
Leave out the turkey mince, and it instantly transforms into a fantastic vegan and vegetarian friendly recipe that’s just as hearty and delicious.

Truly Yummy Stuffed Sweet Potato
Equipment
- 1 large frying pan or shallow casserole with lid
Ingredients
- 4 sweet potatoes
- 1 tbsp olive oil recommend Belazu Early Harvest extra virgin olive oil
- 500 grams turkey mince
- 1 tin black beans, drained and rinsed
- 1 packet spice mix recommend Old El Paso spice mixes for tacos and fajitas
Instructions
- Cook the sweet potatoes either in the microwave or oven at 200℃. Depending on the size they should only take 5-10 minutes in the microwave or ½ hour in the oven.
- Whilst the sweet potatoes are cooking, heat the oil and fry the mince until cooked.

- Add the black beans and spice mix to the mince and combine so everything is coated.

- Pour in 150ml of water, give everything a stir and cook on a low light until the sauce has thickened.

- Once the sweet potatoes are cooked, plate up by opening a sweet potato, add your mince filling and top off with Truly Yummy Guacamole and Truly Yummy Salsa.
