Truly Yummy Broccoli Salad
Gluten free and dairy free broccoli salad. Recommended ingredients broccoli, red pepper, apple, pine nuts, extra virgin olive oil, white balsamic vinegar, honey, Dijon mustard, salt & pepper.

Salad
- 1 head of broccoli (approx. 300g), washed and cut into very small florets. Remove the main stalk but finely slice any tender stalks attached to the florets.
- 1 red pepper, diced into 1cm pieces
- 1 red or green eating apple, cored and diced into 1cm pieces recommend red as they are sweeter
- 30 g pine nuts alternatively use sunflower seeds
Salad Dressing
- 50 g olive oil extra virgin
- 30 g white balsamic vinegar alternatively use cider vinegar
- 2 tsp honey
- 3 tsp Dijon mustard
- salt & pepper
Salad dressing
Combine all the dressing ingredients in a jar and shake well until blended. Alternatively, whisk them together in a bowl or jug until smooth and well combined.
Pour the dressing over the salad ingredients and mix throughly so everything is generously coated.
Serve straight away or cover and pop in the fridge.
