Truly Yummy Broccoli Salad

A fresh gluten free and dairy free broccoli salad made with raw ingredients and a simple dressing that gets better over time.
This truly yummy broccoli salad is completely gluten free and dairy free. Made with just a handful of simple ingredients, it creates a fresh, healthy salad that improves in flavour the longer it sits. Unlike most dressed salads that need to be eaten immediately this one is even better the next day, making it perfect for preparing ahead of BBQ’s, parties and family gatherings.
I first discovered this salad while visiting friends in Germany. My friend swears by her Thermomix for almost all her cooking. She even takes it away with her on holiday. When she made this salad, it was prepared using her Thermomix but rest assured it can be made without a Thermomix and to be honest I prefer the texture when everything is chopped by hand.
The original recipe comes from Thermomix but in true Truly Yummy style I’ve adapted it by tweaking the ingredients and increasing the quantity of dressing to ensure everything is generously coated.
It is quick and simple to prepare and all the ingredients are used raw including the broccoli to retain maximum crunch and nutrients. It’s perfect served alongside BBQ meats and fish or as part of a fresh summer spread.

Truly Yummy Broccoli Salad
Equipment
- 1 Serving bowl
Ingredients
Salad
- 1 head of broccoli (approx. 300g), washed and cut into very small florets. Remove the main stalk but finely slice any tender stalks attached to the florets.
- 1 red pepper, diced into 1cm pieces
- 1 red or green eating apple, cored and diced into 1cm pieces recommend red as they are sweeter
- 30 g pine nuts alternatively use sunflower seeds
Salad Dressing
- 50 g olive oil extra virgin
- 30 g white balsamic vinegar alternatively use cider vinegar
- 2 tsp honey
- 3 tsp Dijon mustard
- salt & pepper
Instructions
Salad
- Once all the salad ingredients have been chopped, place into a serving bowl together with the pine nuts.
Salad dressing
- Combine all the dressing ingredients in a jar and shake well until blended. Alternatively, whisk them together in a bowl or jug until smooth and well combined.
- Pour the dressing over the salad ingredients and mix throughly so everything is generously coated.
- Serve straight away or cover and pop in the fridge.
