Cuisine American
- 4 medium sweet potatoes, peeled and slice into 1cm thick fries or 2cm cubes
- 4 tbsp extra virgin olive oil or avocado oil
- 2 tsp sweet smoked paprika
- 2 tsp garlic granules
- 2 tsp onion granules
- 2 tsp dried oregano
- 1-2 tbsp cornflour recommend Brown & Polson Cornflour
- salt & pepper
Preheat oven to 220℃/ 200℃ fan or Gas Mark 7
Using a paper towel ensure the sweet potato fries or cubes are dry
If using cornflour, in a bowl coat the fries / cubes in the cornflour ensuring each one is coated
Drizzle in the oil and then toss them in the spice mixture
Spread the coated fries / cubes onto a baking tray ensuring there is space between each fry/cube. This will help to crisp them up
Bake in the oven for 25 - 30 minutes, giving them a shake and a flip after 15 minutes so they gain colour on all sides
To ensure even cooking, crispy rather than soggy fries:
Do not crowd the tray
Spread the fries/cubes across multiple trays
If you'd prefer to cook using an air fryer
Preheat your air fryer to 200°C for 3 minutes
Place the fries into the air fryer basket
Do not overcrowd the basket
Ensure a single or double layer
Cook in batches if your air fryer is small
Air fry for 15-20 minutes
Shake the basket every 5 minutes to make sure they cook evenly
