When creating a fakeaway at home, I’ve found most supermarket sauces contain thickening agents and you can’t always be sure they’re suitable for those will allergies. The same goes for takeaway sauces, especially if you need to avoid cross contamination. Making your own from scratch gives you complete control, so you can enjoy your favourite dishes without missing out.

Truly Yummy Sweet & Sour Turkey

Truly Yummy Sweet & Sour Turkey

Gluten free and dairy free sweet & sour turkey. Recommended ingredients M&S Tomato Ketchup Only 8 Ingredients, Yutaka Organic Tamari Soy Sauce, Brown & Polson Cornflour, tin of pineapple chunks in juice, apple cider vinegar, honey, garlic, ginger, avocado oil, turkey breast, onion, red pepper, baby corn, mangetout, optional – spring onions and cashew nuts.

Equipment

  • 1 wok or deep frying pan
  • 1 small saucepan

Ingredients
  

Sweet & Sour Sauce

  • 435 g tin of pineapple chunks in juice
  • 2 tbsp tomato ketchup recommend M&S Tomato Ketchup Only 8 Ingredients
  • 3 tbsp apple cider vinegar
  • 3 tbsp honey
  • 2 cloves of garlic, crushed
  • 1 thumb sized piece of fresh ginger, grated
  • 2 tbsp tamari soy sauce recommend Yutaka Organic Tamari Soy Sauce
  • 1 tbsp cornflour mixed with a little water recommend Brown & Polson Cornflour

Turkey Stir Fry

  • 2 tbsp avocado oil recommend avocado oil or vegetable or sunflower oil
  • 500 g turkey breast, sliced into thin strips
  • 1 onion, diced into 2cm cube shaped pieces
  • 1 red pepper, cut into 2cm cube shaped pieces
  • 200 g baby corn, chopped into 3 pieces
  • 200 g mangetout, slice into two

Optional Toppings

  • 4 spring onions, finely sliced
  • 50 g raw and whole cashew nuts

Instructions
 

Sweet & Sour Sauce

  • Drain the pineapple chunks from the juice. Pour the juice into a saucepan and set the chunks to one side.
  • Add the remaining sweet & sour ingredients to the pan. Stir and gently heat the sauce until it thickens.
  • Turn off the heat and set to one side.

Turkey Stir Fry

  • Once all the meat and vegetables have been prepared, heat the avocado oil in the wok on a high heat.
  • Add and fry the turkey strips until browned and cooked through. Then remove from the wok and set aside.
  • Next fry all of the vegetables except the pineapple chunks until they start to cook and soften a little. Cook to your liking, I like mine to still have a little crunch.
  • Add the turkey, pineapple chunks and the sauce to the vegetables and give everything a good stir. Once the sauce has coated everything it is ready to serve.
  • Serve with plain white rice and top the stir fry with a few cashew nuts and slices of spring onion.

Notes

If the sauce is a little too thick, add more water or pineapple juice to loosen it. 
If you like a little more sauce, feel free to double the sauce ingredients.
This recipe also works well with lean pork or chicken strips. For a vegetarian option, simply omit the meat and add extra vegetables such as beansprouts and pak choi.
