Truly Yummy Tzatziki

Creamy gluten free and dairy free tzatziki, perfect served with gluten free pittas, shawarma chicken and summer BBQs.
My Truly Yummy Tzatziki is both gluten free and dairy free, yet so delicious that even my husband enjoys it which is saying something as he doesn’t usually like cucumber.
Made with just a handful of fresh ingredients, it’s incredibly quick and easy to prepare. Serve as a dip with warm gluten free pittas or use it as a cool and refreshing sauce alongside my Truly Yummy Shawarma Chicken.
Fresh, healthy and delicious, it’s a world away from the small supermarket tubs filled with lots of other ingredients. Best of all, it’s completely dairy free, making it a tzatziki everyone can enjoy.
It can be made ahead and stored covered in the fridge for a couple of days. The garlic, cucumber and mint have time to mingle, meaning the flavours deepen and become even more delicious over time.

Truly Yummy Tzatziki
Equipment
- 1 box grater
- 1 Serving bowl
Ingredients
- 1 medium cucumber
- 1 cup dairy free yoghurt recommend The Coconut Collab Natural Yoghurt
- 1 tbsp extra virgin olive oil
- 2 tbsp fresh mint leaves, finely chopped
- ½ lemon, juice only
- 1 clove of garlic, crushed
- ½ tsp salt
Instructions
- Wash and grate the cucumber on the large holes of the box grater.
- Place the grated cucumber onto a couple of sheets of kitchen roll and squeeze out as much excess moisture as possible over the sink. You may need to do this in batches. Removing the excess water helps prevent the tzatziki from becoming watery.
- Place the grated cucumber in the serving bowl and add the remaining ingredients – yoghurt, chopped fresh mint, juice of ½ a lemon, olive oil and salt.
- Stir until well combined and then leave it to rest in the fridge for the flavours to develop.
- Serve straight away or chill for later with a garnish of fresh mint and a drizzle of extra virgin olive oil.
- Any leftovers can be kept in the fridge, covered, for up to 3 days. In fact, the flavours continue to develop over time. Simply give it a quick stir before serving.
