Truly Yummy Watercress & Fennel Salad

A fresh, healthy gluten free and dairy free watercress and fennel salad with a simple orange dressing, ready in minutes and perfect for BBQs and summer entertaining.
My Truly Yummy Watercress & Fennel Salad proves that simple ingredients can create something truly special. Completely gluten free and dairy free, this elegant salad is made with just five ingredients, takes just minutes to prepare and is packed with fresh and healthy flavours.
I love serving it alongside BBQ meats during the summer but it’s equally at home as a side dish for dinner parties or al fresco lunches. Light, fresh and full of flavour, it’s the perfect accompaniment to grilled meats and fish.
The dressing couldn’t be simpler, combining freshly squeezed orange juice, olive oil and a little seasoning. As the thinly sliced fennel marinates in the dressing, it softens slightly while soaking up all those lovely citrus flavours.
To finish, toasted pine nuts add a delicious crunch, while peppery watercress brings freshness to every bite. I also like to add a handful of rocket which complements the watercress beautifully and gives the salad an extra peppery kick.

Truly Yummy Watercress & Fennel Salad
Equipment
- 1 small bowl
- 1 salad bowl
Ingredients
Dressing
- 1 small orange, juice only
- 3 tbsp extra virgin olive oil
- 1 fennel bulb, finely sliced
Salad
- 80 g fresh watercress
- 60 g pine nuts
- 90 g wild rocket optional
Instructions
Dressing
- In a small bowl combine the juice of one orange, extra virgin olive oil and a little seasoning.
- Add the thinly sliced fennel to the dressing and allow to marinate and soften for 10 minutes.
Salad
- Gently toast the pine nuts so they are a little golden and set to one side to cool.
- In a salad bowl add the watercress and pine nuts and rocket if using.
Assembly
- Pour the fennel and dressing over the watercress leaves and pine nuts and gently mix so that everything is generously coated in the lovely citrusy dressing.
- Serve immediately.
