A quick and easy family favourite

If you’ve recently become gluten free, dairy or both, you may feel overwhelmed by the thought of making every meal completely from scratch. Equally, life is busy and there isn’t always time to cook everything yourself. The good news is that there are some excellent gluten free and dairy free products available that, when paired with a few homemade sides, can be transformed into a truly yummy meal the whole family will enjoy time and time again.

This is not an advert and I’m not being paid to recommend any of these products. They are simply items I genuinely buy and use in my own kitchen because they make gluten free and dairy free cooking quicker, easier and just as enjoyable. You truly don’t have to miss out.

Keeping it simple with trusted ingredients

My Truly Yummy Fajitas use shop-bought gluten free wraps and a fajita seasoning mix. Both of which are readily available in the regular aisles of most UK supermarkets. The seasoning mix I use does not contain any declarable allergens. If you prefer to make your own, I’ve included my homemade spice blend in the notes below. Making your own seasoning also means you can easily adjust the spice level to suit your own taste.

Build your own Truly Yummy Fajitas

To make my Truly Yummy Fajtas, I simply cook the chicken, peppers and onions with the seasoning before serving everything alongside my Truly Yummy Guacamole for cool creaminess, my Truly Yummy Tomato Salsa for sweetness and a little extra kick and some shredded little gem lettuce for added crunch. For those family members who aren’t dairy free I also place a bowl of grated cheddar and a tub of sour cream on the table. Serving everything separately means everyone can build their fajitas exactly the way they like them.

Perfect For Busy Weeknights and Sharing

Not only is this a quick and easy midweek meal the whole family enjoys, it’s also a brilliant informal dinner to share with friends. If you’re catering for vegetarians, simply swap the chicken for extra vegetables such as chunky courgettes pieces, mange tout and baby sweetcorn.

Truly Yummy Fajitas

Gluten free and dairy free fajitas. Recommended ingredients Bfree Gluten Free Multigrain Wraps, Old El Paso Fajita Seasoning Mix – Roasted Tomato & Pepper Medium, chicken breasts, onion, red pepper, yellow pepper, avocado oil, Truly Yummy Guacamole, Truly Yummy Tomato Salsa, little gem lettuce.

Equipment

  • 1 large frying pan
  • 1 Serving bowl

Ingredients
  

  • 1 packet of gluten free wraps recommend Bfree Gluten Free Multigrain Wraps
  • 2-3 chicken breasts, thinly sliced
  • 1 onion, sliced into half moons
  • 1 red pepper, thinly sliced
  • 1 yellow pepper, thinly sliced
  • 2 tbsp avocado oil
  • 1 packet of fajita seasoning mix recommend Old El Paso Fajita Seasoning Mix – Roasted Tomato & Pepper Medium
  • 1 cup cold water

Instructions
 

  • Heat 1 tablespoon of avocado oil in the saucepan and fry the chicken strips until cooked through.
  • Remove the chicken from the pan, place in a bowl and set to one side.
  • In the same pan heat the remaining oil and fry the onions until they start to soften then add the slice peppers.
  • Once the peppers have also started to soften, return the chicken strips to the pan.
  • Sprinkle over the fajita mix and give everything a stir to ensure the chicken and vegetables are coated in the seasoning mix.
  • Add a cup of water, stir, bring to the boil and then simmer for a few minutes until the sauce has thickened and everything is generously coated.
  • Warm the wraps either in the microwave for 10-15 seconds or wrap them in foil and place in the oven for 2-3 minutes to warm through.
  • Place the spicy chicken and vegetables in a bowl to be served alongside the warm wraps, guacamole, salsa and shredded lettuce.

Notes

If you prefer to make your own fajita seasoning, please see my recipe below. I would recommend not adding a cup of water to the pan and instead serve the chicken and vegetables as a dry mixture.
Fajita Spice Blend Recipe
½ tbsp hot chilli powder or mild chilli powder depending on your taste preference
2 tbsp sweet smoked paprika
1 tbsp ground cumin
1 tbsp garlic powder
½ tbsp ground coriander
1 heaped tbsp dried oregano
Combine all the ingredients together. This makes enough for a small jar. Add a teaspoon of the spice blend at a time to your chicken and vegetable mixture and according to your taste.
